Recipe: Sour Cream Banana Muffins

Cream together:
1 ½ cup sugar
1 cup sour cream or yogurt
½ cup butter
Add:
2 eggs
3 mashed bananas
2 teaspoons vanilla

In a separate bowl, mix:
2 cup flour
1 teaspoon salt
1 teaspoon baking soda

Combine dry and moist ingredients. Bake at 375F for 20-25 minutes for muffins, longer for loaf pan. Do a toothpick test to make sure they’re done.

These can be done in loaf pans, muffin tins, or a 9×13” pan.
Raisins, craisins, or nuts can be added, or chocolate or butterscotch chips.
